docs: Explain the symbolic icon paintable situation
Add a paragraph to the migration guide that explains
how to properly render symbolic GtkIconPaintables.
Also mention this in the GtkIconPaintable docs.
There's a reason you can't spell 'paintable' without
'pain'...
