Fix GPM content types for Doorkeeper
Certain controllers (e.g. Doorkeeper::TokensController) don't expose the
method "request_format". This commit changes
Gitlab::Metrics::WebTransaction so we don't rely on this method, instead
using the underlying code this method uses.
