doc: typeset HEAD and variants as literalmm/doc-tt
This is an application of the newly added CodingGuidelines to HEAD and
variants like FETCH_HEAD. It was obtained with:
perl -pi -e "s/'([A-Z_]*HEAD)'/\`\$1\`/g" *.txt
