core: Use python3 instead python2jjardon/python3_default

"Python 2.x is legacy, Python 3.x is the present and future of the language"
As a reference, python3 is already the default python version in Arch,
and other distros like Ubuntu/Debian [2] or Fedora [3] are planning to
switch soon
