src,test: support dynamically linking OpenSSL 3.0

This commit enables node to dynamically link against OpenSSL 3.0.

The motivation for opening this PR even though OpenSSL 3.0 has not been
released yet is to allow a nightly CI job to be created. This will
allow us stay on top of changes required for OpenSSL 3.0, and also to
make sure that changes to node crypto do not cause issues when linking
to OpenSSL 3.0.

crypto: remove deprecated legacy API

The `crypto.Credentials` legacy API has been Runtime deprecated since
v0.11.13 and users had been adviced to use `tls.SecureContext` instead.

test: fix flaky test-crypto-classes.js

On non-FIPS, we can instantiate DiffieHellman with 256 instead of 1024.
This should be quite a bit faster, and therefore prevent the timeouts.

crypto: expose ECDH class

For consistency with the rest of the crypto classes, exposes the ECDH
class. Originally, only the createECDH function was exposed, and there
was no real reason to hide the class.

test: crypto createClass instanceof Class

The crypto classes are also exposed as createClass for each class. This
tests that each of them returns an instance of the class in question.
